To produce this exceptional oil, the olives, which are small and unripe hand-picked olives, are cold pressed (16-18 °C) just few hours after the harvest, which happens in early October when the fruit are not yet fully mature. The result is an oil characteristically pungent with intense fruity and grassy taste, distinct aroma of fresh unripe olive fruit and a very low acidity (nearing 0.1% in many of its production years).  It is very rich in antioxidants and healthy phenols therefore complying with the health claim 432/2012 of the European Union regarding health benefits of olive oils.
