During the summer harvest season the ripe tomatoes are collected and transport directly to the processing facility at the domain of the producer. The tomatoes (only traditional varieties, no hybrids) are processed in a traditional way less than 24 hours after harvest to ensure freshness and quality. 
This sauce will transport you to the past by reminding you the traditional flavors that you may have forgoten. In winter times or spring this sauce will bring you summer.
